Cauliflower Mac and Cheese

I am not a cook and this is not a cooking blog. But I got purple cauliflower at the Hannaford grocery store in Delmar this week and I am easily amused. I made baked cauliflower mac and cheese with the things I already had in my pantry, and the newly purchased PURPLE CAULIFLOWER! It turned out pretty good and it was real easy. Basically the cauliflower was my healthy excuse for having mac and cheese for dinner. 

 

Preheat oven to 375

Grease a pan

 

-1 box of mac and cheese

-1 head of cauliflower

 

Boil mac and cheese to directions

Add in cauliflower when 3 minutes remain

Drain well

-2 tablespoons of oil

-1/3 cup of panko

-fresh basil

Toast it up on medium till it looks crunchy (3 minutes)

-milk

-cream cheese

-parmesan cheese

-salt + pepper

 

Mix all of the ingredients together to get your perfect mac and cheese consistency

Pour into pan

Put some panko and cheese on top if you’d like

Bake for 15 minutes until brown and gooey
